Buffalo wings – oven baked and crispy.

I love fried Buffalo wings that you get out at a restaurant of bar. Unfortunately most of us do not have a fryer at home and if we do and use it, the house often smells and you waste a lot of oil. Here is a recipe for baked wings.

By brining them then drying them and tossing them with corn starch and baking powder you get crispy wings. Then toss them in Buffalo sauce. Enjoy with blue cheese dressing.

Ingredients

  • 2 quarts 2 cold water

  • 1/4 cup 1/4 kosher salt

  • 3-4 lbs 3-4 chicken wing sections (about 35-40)

  • 2 Tbs 2 baking powder

  • 2 Tbs 2 corn starch

Directions

  • Mix the salt and water for the brine and brine the wings 2 hours. Preheat oven to 425 degrees F.
  • Remove wings from brine and pat dry – do not rinse. Spread on a cookie drying sheet and let dry in refrigerator overnight 6-12 hours.
  • Toss the wings with baking soda and cornstarch and spread 1 a rack or 2 over a cookie sheet and bake in the oven for one hour and 15 minutes. Flip wings after 30 minutes.
  • Toss the wings in your favorite buffalo sauce and return to oven to crisp 2-3 minutes. Enjoy.
